Vegan Peanut Butter Cup Bars

Linda from our Tallaght store tried this recipe from the wonderful people at detoxinista.com using ingredients from The Health Store. They turned out great!

Linda says:

This is my favourite no-bake peanut butter bar recipe. It is quick and easy and made with truly nutritious ingredients. Perfect for a healthy snack.

 

Ingredients

Chocolate crust:

70g Sukin almond flour

2 tablespoons  Nua Naturals cacao powder

2 tablespoons Meridian pure maple syrup

1 tablespoon melted Coconut Merchant coconut oil

Pinch of The Health Store fine sea salt

 

Peanut butter filling:

170g Meridian smooth natural peanut butter

3 tablespoons Meridian pure maple syrup

1 tablespoon melted Coconut coconut oil

Pinch of The Health Store sea salt

 

Chocolate topping:

4 tablespoons Nua Naturals cacao powder

4 tablespoons melted Coconut Merchant coconut oil

3 tablespoons Meridian pure maple syrup

  1. Mix all the ingredients for the chocolate crust in a bowl until it is formed into a dough ball. Ensure it is still  relatively moist. If not add another spoon of coconut oil. Squish this into a baking tray lined with baking paper and leave in the fridge or freezer to set for at least an hour.
  2. Use the same bowl to mix all the filling ingredients together. Pop this on top of your crust mix and place back in the fridge/freezer for another 30 mins
  3. Once the other 2 layers have been cooled for at least an hour, mix the topping ingredients and pour on top. This will need to be set for 1-2 hours in the fridge. Then chop into squares or bars. You can also wrap them in grease proof paper individually for gifts or store in the fridge or freezer for up to one month.

Other options:

Swap – coconut oil for butter

Swap: Maple syrup for agave or honey
