The Spanish Not Omlette

Spanish omelettes are delicious, filling and nutritious. What if we told you that you don’t need eggs to make an omelette? With just one ingredient you can have a tasty alternative. This recipe is suitable for vegetarians, vegans, coeliacs and anyone looking for a quick & tasty dish 😀

You will need: 

Chickpea/Gram Flour

Potatoes (baby potatoes work best & try to get organic)

Water

1 x red onion

Herbamare Seasoning

Nutiva Coconut oil

Black pepper if desired

Method

Saute Potatoes & Onion in coconut oil

Fry thinly sliced potato & onion in coconut oil on a medium heat until soft

Mix gram flour with water until it is pancake mix consistency & mix in your seasoning

 Mix chickpea flour with water until you have a smooth consistency & add your preferred seasoning. We find Herbamare works great with some black pepper

Once fried untill solid on the bottom, grill the top until crispy

Pour mixture over potato & onion & cook until solid, then grill the top. Add some fresh parsley if you like!

Top with some organic herbs & serve with a side salad

Serve! It really is that simple. We served ours with a grated carrot, cranberry & sunflower seed salad with lemon juice as a dressing.
