The Spanish Not Omlette
Spanish omelettes are delicious, filling and nutritious. What if we told you that you don’t need eggs to make an omelette? With just one ingredient you can have a tasty alternative. This recipe is suitable for vegetarians, vegans, coeliacs and anyone looking for a quick & tasty dish 😀
You will need:
Potatoes (baby potatoes work best & try to get organic)
1 x red onion
Nutiva Coconut oil
Black pepper if desired
Fry thinly sliced potato & onion in coconut oil on a medium heat until soft
Mix chickpea flour with water until you have a smooth consistency & add your preferred seasoning. We find Herbamare works great with some black pepper
Pour mixture over potato & onion & cook until solid, then grill the top. Add some fresh parsley if you like!
Serve! It really is that simple. We served ours with a grated carrot, cranberry & sunflower seed salad with lemon juice as a dressing.
